Nestled within a golden, herb-infused falafel crust, the soft-boiled egg oozes with savoUry satisfaction, creating a mouthwatering explosion of tastes and textures with every bite.
- Place eggs in a pot of boiling water and boil for 5 minutes.
- Drain and rinse under cold water, until cool enough to handle. Peel eggs.
- Preheat oven to 200C. Divide falafel mix into 4 lots. In your hand, mould one portion of falafel mix around each egg to cover completely.
- Place on a baking dish lined with baking paper. Spray with oil. Bake for 10-12 minutes, turning once or twice, until the outside of the eggs is golden.
- Serve eggs with salad and chutney on the side or as a snack or party nibble.
