Ingredients
4 slices of bread
2 large eggs
1/2 cup milk (dairy or plant-based)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Cooking spray, oil or butter to cook
Optional toppings: Fresh berries, sliced banana, Greek yogurt, maple syrup

In a shallow dish, whisk together the eggs, milk, vanilla extract and ground cinnamon until well combined.
Preheat a non-stick skillet or griddle pan over medium heat.
Add oil or butter and melt.
Using tongs, dip each slice of bread into the egg mixture, making sure to coat both sides evenly. Allow any excess mixture to drip off.
Place the bread slices on to the preheated pan. Cook until golden brown on one side, about 2-3 minutes.
Flip the bread slices using a spatula and cook for an additional 2-3 minutes, or until the other side is golden brown and the French toast is cooked through.
Transfer the cooked toast to a serving plate.
Repeat the process with the remaining bread slices.
Serve the French toast warm with your choice of toppings.
