- Preheat your oven to 375°F (190°C). In a large bowl, whisk together the eggs and milk until well combined. Set aside.
- Heat the olive oil in an oven-safe skillet (a cast iron skillet is ideal) over medium heat. Add the sliced onion (red onion or white will work) and bell pepper, and sauté until they become tender and slightly golden browned (about 5 minutes). Stir in the sliced mushrooms and cook for 2 minutes more.
- Add the fresh spinach leaves to the skillet and cook until they wilt down, about 1 minute. Feel free to season the vegetables with salt and pepper.
- Add the eggs (whisked) over the cooked vegetables in the skillet. Gently stir the mixture to ensure the eggs and vegetables are evenly distributed.
