Ingredients
6 large eggs
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon white vinegar
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Fresh chives or parsley, finely chopped (optional)
Paprika, for garnish
Directions
Bring a pot of water to a gentle boil over medium-high heat. Add the eggs and cook for 10-12 minutes.
Remove the eggs from the heat and transfer them to a bowl of iced water to cool for a few minutes. You can do this step ahead of time, and use the eggs when you’re ready.
When ready to prepare the eggs, gently peel off the shells.
Cut each egg in half lengthwise. Carefully scoop out the yolks and transfer them to a mixing bowl. Mash the yolks with a fork until smooth and creamy.
Add the mayonnaise, Dijon mustard, white vinegar, salt, black pepper and chives to the mashed yolks. Mix well until all the ingredients are thoroughly combined.
To assemble: spoon or pipe the yolk mixture into the hollowed-out egg whites, creating a small mound. Repeat with all the egg halves.
Lightly sprinkle the devilled eggs with paprika for added flavour and a pop of colour. Optional: Sprinkle extra finely chopped chives or parsley on top for a fresh and vibrant touch.
Arrange the devilled eggs on a platter and serve immediately, or they can be stored in the fridge for up to 2 days.
