Classic Pancakes
A classic breakfast and brunch treat; who doesn’t love a pancake? Pancakes are a classic treat for breakfast or brunch (or dessert). They can be as simple or fancy as you like, and paired with all manner of toppings. If you haven’t had pancakes in a while, now’s the time to rediscover this family favourite.

Ingredients
1 cup all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract (optional)
Cooking spray or additional butter for greasing the pan
Directions
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using) until everything is thoroughly combined.
Pour the wet ingredients into the dry ingredients and gently stir the mixture with a spoon or spatula until just combined. It's okay if there are a few lumps in the batter; over-mixing can lead to tough pancakes.
Let the pancake batter rest for about 5-10 minutes. This resting time helps to activate the baking powder and ensures that the pancakes will be light and fluffy.
While the batter is resting, heat a non-stick skillet or griddle over medium heat. If needed, lightly grease the surface with cooking spray or a little butter.
Once the skillet is hot, pour about 1/4 cup of the pancake batter onto the surface for each pancake. You can make the pancakes larger or smaller, depending on your preference.
Cook the pancakes for about 2-3 minutes, or until bubbles start to form on the surface. When the edges look set, and the bubbles remain open, it's time to flip the pancakes.
Carefully flip the pancakes with a spatula and cook for an additional 1-2 minutes, or until the other side is golden brown and the pancake is cooked through.
Remove the cooked pancakes from the skillet and keep them warm on a plate covered with a clean kitchen towel while you cook the remaining batter.
Repeat the process with the remaining batter until all the pancakes are cooked.
Serve the pancakes warm with your favourite toppings such as maple syrup, fresh berries, sliced bananas, chocolate chips, or a dollop of whipped cream.
