- Heat a pan over a medium-high heat with a little oil.
- Peel and mash the banana in a bowl. Add the eggs and cinnamon and mix well, until it forms a batter.
- Pour half the mixture into the pan and swirl to coat the bottom of the pan. Let cook for a few minutes, until solid enough to flip over. Using a spatula, flip and cook the other side.
- Remove to a plate, and do the same with the other half of the mixture.
- Serve pancakes with fruit, yoghurt and extra cinnamon.
Variations: add blueberries, coconut threads, oats or chia seeds into the batter.
