Ingredients
4 large eggs
1 cup fresh spinach leaves
1/4 cup milk or cream
Salt and pepper, to taste
4 slices cooked ham
Fresh chives or parsley, chopped (for garnish)
Directions
In a blender or food processor, combine the eggs, fresh spinach leaves, milk or cream, salt, and pepper.
Blend slowly until the mixture is smooth and the spinach is fully incorporated, resulting in a vibrant green colour.
Heat a non-stick frying pan over medium heat and add a small amount of butter or oil to coat the pan.
Pour the green egg mixture into the pan and gently stir with a spatula.
Continue to cook, stirring occasionally, until the eggs are softly scrambled and cooked to your desired consistency. Season with additional salt and pepper, if needed.
While the eggs are cooking, heat the slices of cooked ham in a separate pan over medium heat until warmed through.
To assemble and serve
Place a slice of warmed ham on each plate. Top the ham with a generous portion of the green scrambled eggs. Garnish with freshly chopped chives or parsley for added freshness and a pop of colour.
