Ingredients
4 large egg whites
1 cup granulated sugar
1/2 teaspoon cream of tartar
1/2 teaspoon vanilla extract
Pinch of salt
Directions
Preheat the oven to 225°F (110°C) and line a baking sheet with baking paper.
In a clean, dry mixing bowl, add the egg whites and a pinch of salt. Using an electric mixer or a stand mixer with the whisk attachment, beat the egg whites on medium speed until foamy.
Gradually add the sugar, a spoonful at a time, while continuing to whisk. Increase the speed to high and whisk until the meringue forms stiff peaks. Take your time, this should take about 5-7 minutes.
To test if the meringue is ready, rub a small amount between your fingers. If you don't feel any sugar granules, it's done.
Gently fold in the cream of tartar and vanilla extract, being careful not to deflate the meringue.
Using a spoon or a piping bag fitted with a large star tip, drop dollops of the meringue onto the prepared baking sheet. Alternatively, you can create individual nests by piping circles and building up the sides slightly.
Place the baking sheet in the preheated oven and bake for approximately 90 minutes, or until the meringues are dry to the touch and easily lift off the parchment paper.
After baking, turn off the oven and let the meringues cool completely inside the oven. This helps to further dry and crisp them.
